When it comes to getting a new pan there are things to consider when buying a new pan: the weight, material, the size and if it contains a non stick finish.  Most pans have rings on the bottom to help prevent sliding and increase the surface area of the pan which helps it to get heat more efficiently.  Some of these rings are made of different metals such as aluminum or copper that act more effectively to spread heat around the pan. 

Frying pans are not just great because of how it handles food but on how to use it comfortably.  Non-stick pans are easy to clean up and a great choice for frying eggs.  Some frying pans are not dishwasher safe because of it has a durable nonstick coating inside and outside.  Other frying pans may also not be good for high heat ovens, will not work on induction cooktops.

Carbon steel frying pans has excellent heat conduction and retention.  It is lighter than a cast-iron frying pan and has a slick surface.  It is great for stir -frying vegetables, frying chicken tenders.  It evenly cooks each time and there is no need to scrape the bottom of the pan.  It is also oven safe for up to 1,200 degrees.

Cast-iron frying pans are known for retaining heat so well that they are a good choice for doughnuts, deep-frying chicken and other foods as the oil is kept at a constant temperature.

Stainless steel frying pans are oven and broiler safe of up to 600 degrees and are good for cooking burgers, pork chops or steaks.  Having a stainless steel interior makes for great searing.
